When I install Knoppix on my harddrive will it remember my settings automaticly?

Yes ....and no. Depends on what type of HD install you do. If you do a 'Knoppix type', it will run as a single user system with the username Knoppix just like on the CD. It will keep any setup changes you make except to /etc/fstab which it will create default each boot unless you use the bootcode 'nofstab'. If you do a 'beginer type' it will set up as a mlti user system & you choose the usernames. It will do a complete hardware autodetect each boot & you will have to use the 'nofstab' bootcode to kepp your custom fstab if you have one. If you do a 'Debian type', it will not do a hardware autodetect each boot & will keep all your settings. Some of the Knoppix autosetup features will also be unavailable.
Personally I use a Knoppix type install with the nofstab option but that's because you can make a remastered disk from a knoppix type install, usefull if you have made extensive changes.
