Is there some type of "automatic update" software for knoppix that will work similarly to Windows Update?

Not for the CD because you are running from a read only media. If you do a hard disk install you can do an apt-get update then apt-get install of those packages you want to upgrade. You can even do and apt-get uprade and update everything but I found this causes problems on a Debian system installed from Knoppix. If you are truley looking for a complete up-to-date install your better off doing a normal Debian install. I would suggest using using Debian Sarge (aka testing).

I am thinking of switching to Gentoo because they have an easier update interface.

Gentoo has something easier than typing "dselect update" "apt-get upgrade"?

You could always make a shortcut on the desktop that runs apt-get update && apt-get upgrade

But the reason this isn't a good idea is knoppix is a mix of stable,testing,unstable programs. When you install gentoo is will be "pure" meaning everything will work.* Same as if you do a pure install of a testing or stable debain relase.
