Do you know of anyone who has done something similar using knoppix or another unix-based live CD?

I have used touchscreens with KDE, iceWM, xfce, FVWM2... it is just seen as a mouse in most cases. you MAY have to compile the driver and screensize into the kernel in some cases but... try first.
