Controlling the apps that are installed when using mkbootdev

My USB pen is too small to accomodate all the apps in Knoppix, and so my attempts at a USB pen installation have failed:(

I'm using the mkbootdev command

Is there a way to specify which apps are to be installed, so I can install a subset of only those apps that I want
