changing the default language

Is there a way to change something in the ISO file before
burning it to remove the unnessecary default languages
from kde (german & french) and add another one instead?
And while we're here, can I make him load boot after 5
secs of inactivity (at the boot prompt) with my default
cheat codes (by changing something in the ISO)?

Yes. you can make a cd with your favorite cheat codes and boot delay as the default. It's explained on this page under the custom boot cd topic:
