Another option is to use the command line programs mkisofs or growisofs to create a new iso file, similar to the last steps of the knoppix remastering guide.
You would use the -V or -publisher switch to assign a new publisher or volume id to the new iso file. Read the mkisofs man page or visit:

for more info. I think that you need to use growisofs if you are dealing with the DVD sized version of knoppix, but I could be incorrect. Maybe the version of mkisofs included with knoppix will also create a DVD sized iso file.
For a completely different approach, if you could alternatively mount the existing KNOPPIX disc as read/write (with unionfs) you could even edit the ISOLINUX.CFG file and use mkisofs to build a new custom iso instead of using the volume/author/publisher fields.

I found an interesting master thesis containing a nice JAVA app, which could be used to change the publisher with the cheatcodes.

The code is well documented and could be a starting point.
I sent an email to the author (Jens Hatlak) asking if we would adapt his project to our intentions.
The alpha-tool could be an JAVA interface fully OS independent.
A second improvement step should be to implement the different code by mouse-click.
