For those of you looking for an automated remastering solution, OnebaseGo might work for you.

It allows you to "dock" the live CD on your hard drive, then you can add/remove apps (via command line interface or a "click-run" web page). Once you undock it, it will automatically create the ISO for you. I haven't tested it myself yet, but it looks promising. Although I haven't found any reference to it on the website, this looks like it's based on Knoppix 3.1.
