does knoppix have a telnet or ssh server hiding anywhere on the 3.8 cd?
if not, what would be the simplest way to get either a telnet or ssh server up and running on a bootable knoppix cd?

Knoppix has an ssh server. To start it click on "K > KNOPPIX > Services > Start SSH Server"
You will be asked to create a password for the Knoppix user. Once you do that, you can ssh into the Knoppix machine as user Knoppix.

Tip: did you know that you can save your settings by using the "saveconfig" script? It's also accessible via the "KNOPPIX" menu.

Telnet is old and is a big security hole. It is not good to be dependent on telent so I use SSH instead.
Boot Knoppix.
Open a command line konsole window.
Become root user:
su -
Change the root user's password:
passwdEnter the new passwd.
Then change the knoppix user's password:
passwd knoppixEnter the new passwd.
Start SSH service:
/etc/init.d/ssh start
Logout as root user:
exit
