how to translating gnome menu

please tell how to translate gnome menu in knoppix/morphix

If memory serve, GNOME is multi-lingual enabled and all you need is to change the locale. I can have a Chinese translated desktop with the right locale but forgot the exact environment variable to change. It really is very easy.
