What items from the knoppix cd would I need to just run kde and another application from kde?

Depends upon the application, you would need to get all of the dependencies (i.e. libraries, and sub programs), and the applicaion. That will require digging in either the arcives of that applicaion's site, and all of those site's, and their sites, ad nauseum.
Or you could do the same by geting it from the debian web page's packages page.
But either way it will require lots of work for what ever you hope to gain.

P.s. There may be other ways, but these are the ones that I know.
