Is there any possible way to eject the knoppix CD while knoppix is still running, then put it back in?

If you have 1G of system ram you can use the toram cheatcode. That places the entire OS into ram freeing up the cdrom drive.

*Note* It is possible to boot a 500MB .iso into only 768M RAM. Some of the remasters are 500MB or less.

You can use the tohd= cheatcode to copy the CD to your harddrive (needs about 700MB free). After that you always boot with the fromhd= cheatcode and once Knoppix is booted it won't use the CD - it'll use the image on your h/d.
If you're using WinXP you'd better check that Knoppix can handle tohd/fromhd on NTFS
