Setting up fstab manually vs. automatically

I would like to remaster a disk so that when it boots it reads an fstab that I created, instead of mounting the hard drives under sda*/sdb*. My ultimate goal is to have a partition mounted on /home and one on /opt. That way students can install/download and still have it the next class. These will be classes like Apache, MySQL, and PHP. I believe this is feasible, but I have remasted a disk 15 times trying something different each time with no success.

Any direction would be helpfull.

You can use the cheatcode nofstab to prevent the rebuilding of /etc/fstab on bootup, which would be rewriting your customised version everytime.
