i have allocated the remaining 6.7 gigs (maximum size that was available) for persistance at first boot on the stick.

If you use Flash disk installation of Knoppix, the maximum size for persistent memory is 4 GB - except when you select experimental version. The line at '/dev/loop0...' shows you your persistent memory.
