what files do i edit to change desktop settings?

ime doing a remaster

want to change a few small things and need to know what files to edit:

1. where do i change the main menu items
2. where can i change the default links for the mozilla browser
3. i want to change the font color of the desktop icons to black on a clear background

just the files to look in would be a big help
