I have seen in other threads that people reffered to Blue Moon BOOK for learning LINUX.
A lot of things you can do with the GUI (KDE or Gnome), but you will find that simple command line tools are often much more effecient - even if there is a learning curve.

I would recommend the Linux Newbie Aministrators Gude for you right now. It covers a lot of essential aspects of using/administrating Linux, but is also written in a way that is easy for people new to Linux to understand.

A much more through treatment of Linux administratino can be found in Rute.

As far as Knoppix specific things go, I would look carefully at the Docs section of this site. Feel free to post specific questions in the Forum as well. Since Knoppix is based on Debian you might also want to look at the documentation at Debian.org. I would really check out the Linux Newbie Administrators Guide first though. It's a good read and very informative. Hope this helps.
