Use the cheatcodes
I restarted and type "knoppix lang=us keyboard=us " then hit enter. Knoppix rebooted then stop at boot command prompt again.
Where did you type the commands? If using the cheatcodes Knoppix doesn't reboot.

To have the cheatcodes permanent you can do as described at Micro remastering. Have a look where this line is within your pendrivelinux installer.
