No - you must install everything from the Knoppix CD, and then remove extraneous software afterwards.
However, you might want to look at some of the smaller distros, like Feather, Damn Small, Flonix or Morphix Light.

Morphix allows you to make your own ISO, combining the packages you want. Morphix is also based on Knoppix.

You may want to try the new Debian installer. It's much easier and works despite beta status.
I have done a couple of Sarge base installs and then apt-getted what I needed.
